Little b's Hot Honey Spareribs

Ingredients
Serves 4 people
2 racks of pork ribs
2 tbsp olive oil
1 tbsp coarse salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp cayenne pepper (optional)
1 tsp ground cumin
Little B's Hot Honey
1 tbsp toasted sesame seeds (optional)
2 spring onions, thinly sliced
Preperation
1. Preparing the ribs
Remove the membrane from the back of the ribs by sliding a knife under the membrane and pulling it off with kitchen paper. Rub the ribs with olive oil and mix all the spices to make a dry rub. Generously coat the ribs with the rub.
Let them marinate for at least 30 minutes (preferably a few hours or overnight in the fridge).
2. BBQ technique (low & slow)
Preheat the BBQ to 110-120°C and use indirect heat. Add wood chips (e.g., apple, hickory, or cherry wood) for extra flavor.
Place the ribs with the convex side up on the BBQ and cook slowly for 3 hours with the lid closed. After 3 hours, wrap the ribs in aluminum foil and cook for another 2 hours at the same temperature.
3. Adding Hot Honey
Remove the ribs from the foil and generously brush them with Little B's Hot Honey. Put them back on the BBQ for 30 minutes without foil so the glaze lightly caramelizes.
4. Finishing touches
Cut the ribs into pieces and sprinkle with toasted sesame seeds and spring onions.
Serve immediately with extra Little B's Hot Honey for an extra kick.
